Sausage peppers and onions

Every day I have patients that come into my office and are very overwhelmed making diet and nutritional changes to help improve their health.

There is a myth out there that essentially says you must slave over a stove for hours to create a good home cooked meal.  Well here is a simple meal that takes under 20 minutes and is really good!

1-2 packs of pre-cooked sausage from whole foods.  Read the ingredients, make sure they are organic, gluten free and no sugar in the ingredients. The simple way to figure out if there is sugar in the sausage package is to look in the ingredient for anything that ends in “ose” i.e. sucrose, glucose, dextrose, maltose…  I think you get the point.

One 12 ounce pack of sausages cooks for about 2 people, so if you are cooking for 4 or 6 just increase the meat accordingly.  Just double or triple what is recommended for the veggies if you are cooking for 4 or 6 as well.

Step 1:  Put 1 tbs of coconut oil in pan on low simmer.  Then cut up 1/2 onion and one 1 pepper.

Step 2:  Let peppers and onions cook for 5-10 minutes until they soften and slightly carmelized.

Step 3: Cut up sausage and add to the pan for 5 minutes.  Add sea salt and ready to serve.  I can get this meal completed from start to finish in about 15 minutes.

It's easy as 1, 2, 3!
