Healthy Sandwiches

pepper and cucumber sandwiches

By Dr. Justin Marchegiani

Sandwiches are like an American past time, but once you factor in the additional refined sugar and gluten, it may not be the healthiest alternative for you and your family.

We came up with this idea while preparing for a canoe trip this weekend to the Russian River, and man it was a hit.  It was very filling plus no energy crash afterwards.  Everyone kept on asking what we were eating, as well as commenting on what a great idea it was.   Now it’s your turn to enjoy!

Step 1:  Cut a pepper or cucumber in half the long way, any color pepper will do.

Step 2:  Use some high quality, organic grass-fed roast beef, ham or turkey.

Step 3:  Use a carrot grater for some additional carrot slices for color and nutrition.  Horseradish mustard with some additional sea salt for flavor.

It’s easy as 1, 2, 3!

Now you have a health protein rich, satisfying snack or meal for you and your family.  Enjoy!
